I just finished a graphic novel about Japanese internment camps where the only named Japanese character had a family name that is not actually a Japanese name. (A Japanese word, yes; not a plausible Japanese family name, and yes, I double-checked in a database.)
Before that was the romance novel where the main character's sister's fiance was a Taiwanese model who had, without any explanation, a Japanese last name.
Given that the internet exists, this is the sort of thing that's relatively easy to get right.
Where mass-market publishing is concerned, my expectations for cultural accuracy are pretty low.
But they're not that low.
